Flour free sugar free pancakes
I'm eating a lot of these babies in the morning and sometimes make an extra batch to snack on or have as my lunch if time is short.
They are very low in carbohydrates, therefore great for everyone with diabetes or trying to control their weight. They are high in good fats, protein and BIG on taste, to keep you full, totally content and happy for quite a few hours 🙂
For the full benefits of low carb, don't add maple syrup or honey (no,no, even raw honey isn't great for that insulin spike) and stick to a small handful of berries and some xylitol (great for sweetening and your liver will love it!)
Ingredients for one person:
1 Tbsp coconut flour
1 tbsp ground almonds/almond meal
a little almond milk to dilute to a pancake consistency
1 small pinch of salt
1 tbsp coconut oil
1 tsp xylitol (optional)
Mix all ingredients while melting the oil in a pan
Make small-sized pancakes and fry each side a couple of minutes until golden
Add some fresh berries, a little coconut yogurt and sprinkle some xylitol if you want – enjoy!
PS: Did I mention how delicious and quick they are to make??!!
