Super simple and super tasty recipe - perfect for the summer! The tahini dressing is a must - to add some good fats, great protein and pack in nutrients like calcium, vitamin E and magnesium.
1 carrot, shredded
1 cup purple cabbage, shredded
1 small ripe avocado, cut into small chunks
1 courgette or yellow squash, thinly sliced
1-2 celery stalks, diced
½ cup cooked sweet potato
Place all ingredients into a salad bowl and toss lightly.
Dress with Tahini Miso Sauce.
TAHINI MISO DRESSING:
3 Tbsp tahini
2 Tbsps miso
Juice of 1 lemon
1/3 cup sesame oil
½ cup water
1 tsp Celtic salt
1 Tbsp apple cider vinegar
Mix well and dress your salad
