Crunchy Healthy Nutty Granola
This is one of those foods you can make in batches that will last the week (if you’re lucky) and can be eaten any time. I like to make this with any combination of nuts and seeds I have at the time, so choose your own, but here’s one of my favourite combo. Packed with good proteins, good fats and fibre, it’s grain-free, gluten and dairy free, with a ‘healthier’ sweetener – better than anything you’ll find in the shops – and so much cheaper!
Ingredients:
(for a large batch, add more!)
300 gms of your favourite nuts – raw, unsalted (try almonds, cashews, walnuts, hazelnuts!)
300 gms of a mix of raw pumpkin, sunflower and sesame seeds
150 gms of coconut shavings – raw unsweetened
2 Tbsps coconut sugar or maple syrup
2 tbsps coconut oil

Method:
Heat your oven to 180C
Spread all the dry ingredients on a baking tray on the parchment sheet evenly
Drizzle maple syrup over the mix
Spread bits of coconut oil throughout
Place in the oven for 15 min, checking after 10 min that it’s not too cooked.
When brown/golden coloured, remove the tray and let it all cool down before putting in a sealed glass container.
Keeps for 1 week on the counter (not in the fridge or it will get soft and soggy).
Enjoy on top of yogurt, added to your muesli, or just plain porridge, for taste, crunch, protein, good fats and deliciousness.
