Gluten Free Sweet Potato Wraps

Sweet Potato Wraps

This is a simple, delicious and quick recipe for gluten free sweet potato wraps.  Very versatile as a base for sandwiches, with a healthy filling such as vegetables (with a protein) fajitas, or salad and cooked fish/prawns or even with your morning eggs.  The options are endless!

Sweet potatoes are great as they are higher in fibre than most white potatoes, useful for good digestion and to stabilise blood sugar.  They’re also packed full of nutrients such as vit A (for your eyes), as long as you include a little fat when you eat them.  They also contain good amounts of immune-boosting, anti-inflammatory, anti-ageing antioxidants such as beta-carotene and vit C.

Ingredients:

2 large sweet potatoes

2 tablespoons virgin coconut oil or ghee

1 cup chickpea flour (also known as gram flour, which also contains protein)

1 teaspoon sea salt

1 teaspoon crushed garlic or powder (optional, for extra flavour)

Instructions:

  1. Prepare the Sweet Potatoes:
    • Peel the sweet potatoes and cut them into small cubes.
    • Boil or steam the sweet potato cubes until they are very soft (about 10-15 minutes).
    • Drain and let them cool slightly.
  2. Make the Sweet Potato Dough:
    • In a large bowl, mash the cooked sweet potatoes until smooth.
    • Add the oil/ghee, chickpea flour, salt, and garlic (if using) to the mashed sweet potatoes.
    • Mix thoroughly until a dough forms. The dough should be pliable and not too sticky. If it’s too sticky, add a bit more chickpea flour.
  3. Shape the Wraps:
    • Divide the dough into 4 equal portions (or more, depending on your preferred size).
    • Roll each portion into a ball and then flatten it into a thin, round wrap using your hands or a rolling pin. Aim for about 1/8 inch thickness.
  4. Cook the Wraps:
    • Heat a frying pan over medium heat.
    • Place one wrap at a time on a frying pan and cook for about 2-3 minutes on each side, or until lightly browned and cooked through.
    • Repeat with the remaining wraps.
  5. Serve:
    • Let the wraps cool slightly on a wire rack before filling with your favourite gluten-free and dairy-free fillings (such as grilled chicken, veggies, avocado, etc.).

Enjoy your delicious and healthy sweet potato wraps!
