I love foraging for nettles and wild garlic at the start of Spring and then make this deliciously simple and nourishing soup. You can feel all the minerals, vitamins and nutrients sipping into every cell of your body. Great for a natural gentle detox, and a calming meal for dinner.
Ingredients (serves 2–3)
- 1 large handful fresh nettles (use gloves to handle 🌿)
- 1 handful wild garlic leaves
- 1 medium onion (or leek if preferred), chopped
- 1 medium potato (or ½ sweet potato), chopped
- 750ml vegetable or bone broth or water
- 1 tbsp olive oil or butter/ghee
- Sea salt + black pepper
- Optional: squeeze of lemon + drizzle of olive oil to serve
Method
- Heat the oil in a pan and gently soften the onion (or leek) for 5–7 minutes.
- Add garlic and potato, stir for a couple of minutes.
- Pour in the broth and simmer for 10–15 minutes until the potato is soft.
- Add the nettles and wild garlic (they’ll wilt quickly).
- Simmer for 2–3 minutes only (to keep nutrients intact).
- Blend until smooth.
- Season to taste and finish with a little lemon and olive oil.
