French Crêpes on Pancake Day

Buckwheat Crêpes 

Buckwheat flour is naturally gluten-free and gives crêpes a deliciously nutty flavour. Here’s a delicious gluten-free, dairy-free French crêpe recipe using buckwheat flour:

Yields: ~6-8 crêpes

Ingredients:

  • 1 cup buckwheat flour
  • 2 large eggs
  • 1 cup non-dairy milk (almond, oat, or coconut milk)
  • 2 tbsp melted butter (use coconut oil or ghee if needed)
  • ½ tsp salt
  • ½ tsp vanilla extract (optional for sweet crêpes)
  • 1 tbsp maple syrup or raw honey (optional for sweet crêpes)

Instructions:

  1. Mix Dry Ingredients: In a bowl, whisk together buckwheat flour and salt.
  2. Prepare Wet Ingredients: In a separate bowl, whisk eggs, then add non-dairy milk and melted butter.
  3. Combine: Gradually add the wet ingredients to the dry ingredients, whisking continuously to form a smooth, lump-free batter.
  4. Rest the Batter: Let it sit for 10-15 minutes (optional but improves texture).
  5. Cook the Crêpes:
    • Heat a non-stick frying pan over medium heat and lightly grease it with butter or coconut oil.
    • Pour ¼ cup of batter into the pan, swirling to spread thinly.
    • Cook for 1-2 minutes until edges lift slightly, then flip and cook for another 30 seconds to 1 minute.
  6. Serve & Enjoy: Fill with your favourite toppings—sweet (jam, fruit, chocolate) or savoury (avocado, smoked salmon, hummus).
