Salmon & Shitake Mushroom Bake
This is a very easy, delicious and highly digestible meal for a good lunch (if you’re trying to lighten your dinners) or an early dinner. Good levels of omega 3 in the fish and shitake mushrooms are very beneficial for immunity and digestion, so don’t hold these back if you like them!. Shitake mushrooms are also great immune-boosters. Very little carbohydrate content so easier to digest for acid-reflux suffers or those suffering from slow digestion.
For Two
Ingredients:
2 fillets of salmon (wild preferably)
1 bunch of fresh lemon thyme
1 punnet of shitake mushrooms sliced (stalk off)
½ lemon sliced in round slices
1 pinch of sea salt and some pepper to taste
1 tbsp ghee/tasteless coconut oil
1 tbsp of water
Method:
Heat oven to 180/gas 5
Place the whole fish on a folded up sheet of aluminum lined with greaseproof paper- you’re going to bake the fish inside the paper/aluminum sheets. Don’t let the aluminum touch the food.
Put the bunch of thyme in the cavity of the fish
Place the round slices of lemon on the top of the fish with the oil and mushrooms
Add salt & pepper
Close the paper/aluminum tightly and bake in the oven for 15/20 minutes.
Serve with some fresh lemon slices, salad, steamed vegetables, brown rice (if you don’t suffer from acid reflux).
