Summer Ratatouille

 

Very French (like myself I hear you say? 😉 ) I love making big batches of this dish and keep it in small bags in the freezer to take out when needed.  Great in pasta, inside omelettes, savoury galettes, with BBQ fish, meat or chicken and as a side dish with pretty much anything.

This is my family recipe – most families have theirs in France –  Great source of vibrant vitamins and antioxidants and so tasty!

Ingredients

2 tsps Ghee/tasteless coconut oil (try ‘cuisine’ by Biona)

3 courgettes, sliced

3 mixed peppers (red, orange, yellow) sliced

1 aubergine sliced

1 large onion

1 Tbsp Herbes de Provence

2 cloves of garlic (or more – I probably use a whole 10!), crushed

200ml chopped tomatoes

1/2 tsp of sea salt

2 tsps olive oil

1 bunch fresh basil

Method

Heat the oil and add the sliced onion and garlic and saute for 5 minutes

Add the herbs, salt and the sliced courgettes and cook for a few minutes

Add the aubergines and cook for a few minutes

Add the peppers and cook for a few minutes

Add the chopped tomatoes and simmer the lot on very low heat for 25 minutes

Add the olive oil once all is cooked and serve with some fresh basil
